Internal Make-Up-Air Wall Canopy Hood with Adjustable Manual Down-Air-Discharge

Ventilation technology's UL listed hoods are fabricated of 18 GA. type 304 polished stainless steel. All exterior seams are continuously welded, liquid tight in accordance with NFPA 96.  All visible welds are ground smooth and are polished back to their original finish..  the unexposed exhaust plenum is fabricated of 16 GA. galvanized steel. ((Stainless steel exhaust plenum is available at an additional cost. ) All hoods are built to accept standard UL listed 16" x 20" x 2" baffle type filters.

This method of introducing air inside the hood is of ten referred to as compensating, short cycle or short circuit, It should be used in environments where there are substantial variations in temperature and where the HVAC system is not large enough or sized adequately. Depending on the type of cooking equipment. These hoods are designed to supply between 38% and 55% internal air through perforated panels located within the hood's capture area.

These hoods also have a very unique feature. They have manually controlled down-air-discharge system, This system allows spot cooling for the cooking staff, and helps to offset radiant heat from the cooking equipment. Members of the cooking staff can open and close dampers as desired by means of an adjustable lever. Discharge velocities must be carefully selected to avoid turbulence, discomfort to staff and potential cooling of the cooking surface.

In most cases, this internal supply air does not need to be tempered, resulting in a substantial savings in energy costs. The balance of the make-up-air required to equalize the hood system should be tempered. This is make-up-air should be delivered in the same room at close proximity to the hood. We recommend that the make-up-air be delivered through 24" x 24" perforated T-Bar ceiling diffuser. If a T-Bar ceiling is not available, the air should be delivered through a four way ceiling diffuser plenum box. Every possible effort must be made to minimize turbulence. We mandate when using 24" x 24" perforated ceiling diffuser panels, that one diffuser panel be used for every 1000 CFM of supply-air with not less than a 12" round or a 10.6" x 10.6" square duct. When using four way ceiling diffuser plenum boxes, you must use one each diffuser plenum box for every 2000 CFM of supply-air with not less than a 14" round or a 12.4" square duct.

Ventilation Technology highly recommends that, where applicable, use of our high temperature model so that if an equipment change is ever required, the hood will be capable f handling any type of equipment up to 600 degrees. Please note that these hoods require a 12" x 24" make-up-air connection. A factory supplied UL listed fire damper must be installed. in accordance with factory specifications. If for any reason the fire damper is not installed the UL listing of the hood will be void and all warranties written and/or expressed will be canceled.
